Mlinarica is one of the local’s favorite brewpubs in the northern part of Zagreb, Croatia. It opened its doors in 1998. It used to be a regular bar but they started serving food shortly after. As the years passed, the place expanded, and so did the selection of mostly domestic lager beer. In 2016 they decided to take their business to the next level and started with the production of their very own nonfiltered, non-pasteurized beer. Apart from 5 core beers available, all year round Mlinarica is famous for seasonal, innovative beers such as Eisbock and new series of wild sours.

They put a part of their saison 00 in a wooden barrel that was previously used for white wine. The microorganisms present in the wood did their job and that resulted in a super dry beer. Some light sourness developed as well, joined by hints of wood and an unmistakable wine character. The soft carbonation of this beer keeps the tartness moderate and enhances the wine like feel.
