OCTOPUS SALAD

FOR 4 PERSONS:

  • 1.5 kg of octopus
  • 1 small onion (finely chopped)
  • 3 cloves garlic (finely chopped)
  • 2 tablespoons chopped parsley
  • Extra virgin olive oil
  • Balsamic vinegar
  • 1/2 lemon
  • salt and pepper to taste
  • capers
  • olives
  • parmesan

Mix all the ingredients and add the oil as desired, but certainly 5-6 tablespoons. Extra virgin olive oil gives flavour and creates an ideal fusion of all the ingredients. Combine this light meal with a glass of red wine, and you will be transported to the Mediterranean without hassle and stop overs.

AVOCADO MIX

For this simple spread you need:

  • 1 avocado (better are those that are more ripe, softer and easier to prepare)
  • Extra virgin olive oil
  • ½ lemon
  • Pepper, salt

Mix avocado with olive oil, lemon juice, a pinch of salt and pepper, and you have an easy and refreshing summer spread. Of course, paired with a piece of homemade bread that you can lightly toast to make it crispy.
