Ingredients:

200 g of dark chocolate, with at least 70 percent cocoa

125 ml of extra virgin olive oil

200 g of sugar

5 eggs

2 tablespoons ground almonds

Preparation:

Preheat oven to 180 degrees, grease a 20 cm diameter cake tin with extra virgin olive oil, melt the chocolate and immediately pour in the extra virgin olive oil and mix quickly and add 2/3 of the sugar and stir until the sugar melts. Remove from the steam and add almonds, a little salt and egg yolks, and mix everything well.  Mix the egg whites with 1/3 of the sugar and mix them until they are frothy; add another third of the sugar and mix again and finally add the remaining sugar and mix until a very solid snow is formed. Pour half of the melted chocolate and almonds into the snow and mix gently and then add the remaining chocolate. Pour the mixture into the prepared mold and bake for 40 minutes in a preheated oven – until the toothpick stuck in the middle comes out clean. Remove from the oven and allow to cool to room temperature.
