Ideal conditions for aging wines are stable temperature, quite an environment and no direct contact with the sunlight so the wine can be undisturbed and relaxed, further developing its aromas and flavors. It is a concept of Underwater Wine cellar on island Pag by Marko Dušanić. This project is a cooperative between the Adriatic Shell company and winemakers from all over Europe. Every bottle under the sea is exposed to a great amount of energy that flows under the water. Sea currents and underwater wellsprings give their unique signature to the flavors and aromas of the wine.
This Pinot Grigio from Kabaji winery aged for 12 months under the sea and it got an exciting twist in flavor and aromas. The color of antique gold is imbued with aromas of honey, smoke and slightly burned toast with undertones of aromatic Mediterranean herbs, nutty fruits and rich aroma of soil mineral. It requires decanting after being opened. The wine is well developed and its bouquet is very mellow.
