Kabaj respresent a lucky combination of Slovenian region of Goriška Brda (Italian Collio) and a born Parisian Jean Michele Morel, vigneron. Kabaj philoposophy is very simple, producing wines based on their taste in order to present them to others. Focus is on nature, vineyards and soil. All wines age in French barrels for at least a year, followed by months of ageing in bottles, where the wine elaborate its taste. Produced by the traditional Georgian method in order to extract more character, depth of color, but also tannins.  Trully amber wine in color, holds rich aroma, pollen and honey. Oxidative notes are balanced with healthy acidity and tannin grip. In time, more floral notes develop and the surface rigor of amphorae aged wine melts away.
